The word "gin" is the English adaptation of "genever", the Dutch name for juniper brandy.
This spirit is exported from England, where it is produced from a neutral spirit in which the berries of the spiny juniper bush have been left to steep.
Gin manufacturing therefore consists in imparting flavour to a highly refined (bland and colourless) neutral spirit, typically a grain, beet or grape brandy. The spirit is then distilled with juniper berries to which various aromatic substances (fennel, orange peel, liquorice, etc.) are added.
If the gin is distilled twice, it is known as London Dry Gin.
Gin is now well-known worldwide, and is a key ingredient of numerous cocktails.
Alcohol content: at least 37.5°.
