Tequila comes from Mexico, and more specifically from Jalisco state, home to the village of Tequila.
Mezcal (see below) is produced in several regions of Mexico.
Tequila, the emblematic Mexican drink, is made from the blue agave plant, which resembles a cactus but is in fact related to the narcissus and amaryllis. Blue agave grows only in Central America.
The fruit of this plant, known locally as pina, is harvested and then steamed for many hours before being ground.
This grinding process yields a sweet, slightly sparkling juice called pulque, which ferments rapidly – 72 hours are enough. Mezcal is produced by distilling the fermented juice once, whereas tequila, which is lighter-coloured with subtler aromas, must be distilled a second time.
Alcohol content: at least 37.5°.
